Go Nutty Orange and Coconut Donuts
Serves 6 – 240 Calories Per Serving – 10g fat/39g carbs/3g protein
Ingredients
- Olive Oil Spray
- 1/2 Banana
- 1 T Olive Oil
- 1 T Orange Zest
- 3/4 Cup Xylitol
- 1/2 Tsp Cinnamon
- 1/3 Cup Unsweetened Almond Milk
- 1 Tsp Apple Cider Vinegar
- 1 Egg
- 1 Tsp Vanilla Extract
- 3/4 Cup Shredded Coconut
- 1 Tsp Baking Powder
- 3/4 Cup Brown Rice Flour
- 3 T Orange Juice
- 2 T Almond Cream Cheese
Instructions
- Pre-heat oven to 325 and spray donut pan with olive oil spray
- Mash banana and mix with olive oil, adding in milk and vinegar
- Add orange zest, 1/2 cup xylitol, half of cinnamon and vanilla, and egg, stirring well
- Add in 1/2 cup coconut, baking powder, and flour, stirring well, until thick
- Spoon batter into donut pan and bake for 16 minutes
- While baking, place rest of xylitol into food processor and blitz until powdered
- Mix together xylitol, other half of cinnamon and vanilla, cream cheese, orange juice, and rest of coconut
- Drizzle glaze over top of donuts after they have cooled for five minutes
