Eric Eats Brussels Buddha Bowl

Serves 4 – 530 Calories Per Serving – 20g fat/73g carbs/17 g protein

Ingredients

  • 1 Cup Quinoa
  • 2 Sweet Potatoes
  • 1 Bundle Brussels Sprouts
  • 1 T Olive Oil
  • 1 T Balsamic Vinegar
  • 1 Cup Cherry Tomatoes
  • 2 Cups Mixed Greens
  • 1 Avocado
  • 4 Green Onions
  • 2 T Hemp Seeds
  • 3 T Tahini
  • 1 Lemon
  • 1/4 Cup Water
  • Sea Salt as Needed

 

Instructions

  • Pre-heat oven to 400 and line baking sheet with parchment paper
  • Cook quinoa according to package directions
  • Slice sweet potato and brussels sprouts, place on baking sheet, drizzle with olive oil and sea salt.
  • Slice tomatoes, green onion, and avocado
  • Mix together tahini, lemon juice, water, vinegar, and sea salt
  • In a bowl, start with quinoa, then add sweet potatoes, brussels sprouts, tomatoes, mixed greens, avocado, and green onion, topping with hemp seeds and tahini sauce.
