Go Bananas! Nut Muffins
Serves 6 – 220 Calories Per Serving – 10g/30g/5g
Ingredients
- 1 Banana
- 1 T Olive Oil
- 1/4 Cup Monk Fruit Maple Syrup
- 1/4 Cup Xylitol
- 1 Egg
- 1 Tsp Baking Soda
- 1 Tsp Baking Powder
- 1 Tsp Vanilla Extract
- 1/2 Tsp Sea Salt
- 1/2 Tsp Cinnamon
- 1/2 Tsp Nutmeg
- 1/2 Cup Brown Rice Flour
- 1/2 Cup Gluten-Free Oatmeal
- 1/2 Cup Walnuts
Instructions
- Pre-heat oven to 350 and line muffin tin with liners
- Mix together all ingredients in a large bowl
- Spoon batter into six muffin cups and bake for 15 minutes
