Summer Time Cod Croquettes

Serves 1  – 540 Calories Per Serving – 27g fat/31g carbs/40g protein


  • 1 Fillet Cod
  • 2 Tsp Honey Mustard
  • 1/4 Cup Chickpea Bread Crumbs
  • 2 Stalks Green Onion
  • 1 Egg
  • 1/2 Lemon
  • 1 T Olive Oil
  • 1/2 Cup Plain Almond Yogurt
  • Sea Salt as Needed


  • Pre-heat oven to 400 and place fish fillet in a tin foil boat, baking for 18 minutes
  • Shred fish into a bowl with the rest of the ingredients besides oil and yogurt
  • Mix together well and form into six patties
  • In a large skillet, heat olive oil over medium heat and cook patties for three minutes on each side
