Summer Time Cod Croquettes
Serves 1 – 540 Calories Per Serving – 27g fat/31g carbs/40g protein
Ingredients
- 1 Fillet Cod
- 2 Tsp Honey Mustard
- 1/4 Cup Chickpea Bread Crumbs
- 2 Stalks Green Onion
- 1 Egg
- 1/2 Lemon
- 1 T Olive Oil
- 1/2 Cup Plain Almond Yogurt
- Sea Salt as Needed
Instructions
- Pre-heat oven to 400 and place fish fillet in a tin foil boat, baking for 18 minutes
- Shred fish into a bowl with the rest of the ingredients besides oil and yogurt
- Mix together well and form into six patties
- In a large skillet, heat olive oil over medium heat and cook patties for three minutes on each side
