A Little Bit of Everything Hash

Serves 2 – 530 Calories Per Serving – 22g fat/67g carbs/15g protein

Instructions

  • 1 T Olive Oil
  • 1 Potato
  • 1 Sweet Potato
  • 1 Sweet Onion
  • 1 Yellow Bell Pepper
  • 2 Eggs
  • 1 Tsp Garlic Powder
  • 1 Tsp Paprika
  • 1/2 Tsp Pepper
  • 1/2 Tsp Cayenne Pepper
  • 1/4 Cup Vegan Parmesan Cheese
  • 1 Cup Plain Almond Yogurt
  • Sea Salt as Needed

 

Instructions

  • Dice potatoes, onion, and pepper and add to a large skillet with olive oil over medium heat
  • Add seasonings and cook until tender
  • Meanwhile, in a small egg skillet, cook eggs over easy
  • Top hash with egg, parmesan and yogurt
