Instructions
- 1 T Olive Oil
- 1 Potato
- 1 Sweet Potato
- 1 Sweet Onion
- 1 Yellow Bell Pepper
- 2 Eggs
- 1 Tsp Garlic Powder
- 1 Tsp Paprika
- 1/2 Tsp Pepper
- 1/2 Tsp Cayenne Pepper
- 1/4 Cup Vegan Parmesan Cheese
- 1 Cup Plain Almond Yogurt
- Sea Salt as Needed

- Dice potatoes, onion, and pepper and add to a large skillet with olive oil over medium heat

- Meanwhile, in a small egg skillet, cook eggs over easy
- Top hash with egg, parmesan and yogurt
