Totally Bastardized Huevos Rancheros
Serves 3 – 480 Calories Per Serving – 19g fat/55g carbs/23g protein
Ingredients
- Olive Oil Spray
- 3 Brown Rice Tortillas
- 1 Can Black Beans
- 1/2 Sweet Onion
- 1/2 Tsp Cumin
- 1 Tsp Chili Powder
- 1 Tsp Garlic Powder
- 3 Eggs
- 1 Avocado
- 3/4 Cup Cherry Tomatoes
- 3/4 Cup Vegan Cheddar Cheese
- 1 Lime
- 1/2 Cup Plain Almond Yogurt
- Sea Salt as Needed
Instructions
- Pre-heat oven to 350 and place parchment paper on baking sheet
- Spray tortillas with olive oil and bake for ten minutes
- Dice onion and add into a medium sauce pan with black beans, cumin, chili powder, garlic powder, and salt, cooking until tender
- Cook eggs sunny-side up and sprinkle with salt
- Assemble starting with tortillas, then beans, then cheese, then eggs, then sliced tomatoes and avocado, and finish with a squeeze of lime and yogurt
