As Fresh As It Gets – Zucchini Fritters

Serves 2 – 390 Calories Per Serving – 27g/24g/15g



  • 1 T Olive Oil
  • 2 Zucchini
  • 1 Egg
  • 1/3 Cup Chickpea Flour
  • 1/4 Cup Vegan Cheddar Cheese
  • 1 Avocado
  • 1/2 Lemon
  • 1/2 Cup Plain Almond Yogurt
  • 1/4 Cup Fresh Basil
  • 1/2 Tsp Pepper
  • Sea Salt as Needed



  • Grate zucchini into a large bowl and squeeze out excess water
  • Add in egg, flour, cheese, salt, and pepper, stirring to combine
  • In a large skillet, heat olive oil over medium heat
  • Form batter into six patties and cook until golden brown on each side
  • Mix together avocado, yogurt, lemon juice, sliced basil, and salt
  • Serve patties over mixed greens and top with avocado sauce
