As Fresh As It Gets – Zucchini Fritters

Ingredients
- 1 T Olive Oil
- 2 Zucchini
- 1 Egg
- 1/3 Cup Chickpea Flour
- 1/4 Cup Vegan Cheddar Cheese
- 1 Avocado
- 1/2 Lemon
- 1/2 Cup Plain Almond Yogurt
- 1/4 Cup Fresh Basil
- 1/2 Tsp Pepper
- Sea Salt as Needed
Instructions
- Grate zucchini into a large bowl and squeeze out excess water
- Add in egg, flour, cheese, salt, and pepper, stirring to combine
- In a large skillet, heat olive oil over medium heat
- Form batter into six patties and cook until golden brown on each side
- Mix together avocado, yogurt, lemon juice, sliced basil, and salt
- Serve patties over mixed greens and top with avocado sauce
