Parmesan Zucchini Crispy Coins

Ingredients
- 1/4 Cup Chickpea Flour
- 2/3 Cup Chickpea Crumbs
- 2 Eggs
- 1/4 Cup Vegan Parmesan Cheese
- 2 Zucchinis
- 1 Tsp Pepper
- 1 Tsp Garlic Powder
- Sea Salt as Needed
Instructions
- Pre-heat oven to 400 and place parchment paper on baking sheet
- In a shallow bowl, combine chickpea crumbs, parmesan, salt, and pepper
- In another bowl, add flour
- In a third bowl, crack and whisk the eggs
- Slice zucchini into small disks and start by dipping into flour, then eggs, and finally chickpea crumbs
- Lay out on baking sheet and bake for 20 minutes
