Parmesan Zucchini Crispy Coins

Serves 3 – 240 Calories Per Serving – 7g Fat/31g Carbs/14g Protein



  • 1/4 Cup Chickpea Flour
  • 2/3 Cup Chickpea Crumbs
  • 2 Eggs
  • 1/4 Cup Vegan Parmesan Cheese
  • 2 Zucchinis
  • 1 Tsp Pepper
  • 1 Tsp Garlic Powder
  • Sea Salt as Needed


  • Pre-heat oven to 400 and place parchment paper on baking sheet
  • In a shallow bowl, combine chickpea crumbs, parmesan, salt, and pepper
  • In another bowl, add flour
  • In a third bowl, crack and whisk the eggs
  • Slice zucchini into small disks and start by dipping into flour, then eggs, and finally chickpea crumbs
  • Lay out on baking sheet and bake for 20 minutes
