Breakfast For Eric: Sweet Potato Waffles
Serves 2 – 420 Calories Per Serving – 14g Fat/59g Carbs/14g Protein
Ingredients
- 1 Sweet Potato
- 1 Cup Oatmeal
- 3/4 Cup Unsweetened Almond Milk
- 2 Eggs
- 1 Tsp Baking Powder
- 1 T Honey
- 1/4 Tsp Salt
- 1 T Olive Oil
Instructions
- Cook sweet potato in the microwave for six minutes, wrapped in a wet paper towel
- Mix all ingredients together in a blender until smooth
- Spray waffle iron and add 1/3 of batter in to make three waffles.
