California Roll Sushi Nachos
Serves 4 – 560 Calories Per Serving – 22g Fat/79g Carbs/18g Protein
Ingredients
- 1 Bag Beanitos Chips
- 1 Cup Short Grain Brown Rice
- 1 T Rice Vinegar
- 1 T Xylitol
- 1 Package Imitation Crab Meat
- 1 Avocado
- 1/2 Cucumber
- 2 T Soy Sauce
- 2 T Mirin
- 1/2 Cup Plain Almond Yogurt
- 2 Tsp Sriracha
- Sea Salt as Needed
Instructions
- In a rice cooker, cook rice according to directions, then season with vinegar, salt, and xylitol
- In a small sauce pan, add together mirin and soy, and let it reduce down over low heat
- Spread out chips on a large platter and top with rice
- Dice avocado, crab, and cucumber and spread them over the rice
- Mix together yogurt, sriracha, salt, and xylitol
- Top nachos with yogurt sauce and soy mixture
