California Roll Sushi Nachos

Serves 4 – 560 Calories Per Serving – 22g Fat/79g Carbs/18g Protein

 

Ingredients

  • 1 Bag Beanitos Chips
  • 1 Cup Short Grain Brown Rice
  • 1 T Rice Vinegar
  • 1 T Xylitol
  • 1 Package Imitation Crab Meat
  • 1 Avocado
  • 1/2 Cucumber
  • 2 T Soy Sauce
  • 2 T Mirin
  • 1/2 Cup Plain Almond Yogurt
  • 2 Tsp Sriracha
  • Sea Salt as Needed

Instructions

  • In a rice cooker, cook rice according to directions, then season with vinegar, salt, and xylitol
  • In a small sauce pan, add together mirin and soy, and let it reduce down over low heat
  • Spread out chips on a large platter and top with rice
  • Dice avocado, crab, and cucumber and spread them over the rice
  • Mix together yogurt, sriracha, salt, and xylitol
  • Top nachos with yogurt sauce and soy mixture
