Herby Lemon Whitefish and Asparagus
Serves 2 – 240 Calories Per Serving – 8g Fat/6g Carbs/34g Protein
Ingredients
- 2 6oz Cod Fillets
- 1 Bunch Asparagus
- 1 Tsp Thyme
- 1 Tsp Parsley
- 1 Tsp Pepper
- 1 Lemon
- 1 T Olive Oil
Instructions
- Pre-heat oven to 350 and make two tinfoil boats on the baking sheet
- Cut ends off of asparagus, drizzle half of olive oil and salt over them, and bake for 12 minutes
- Remove from oven, place fish in foil, squeeze lemon and other half of olive oil over top, and season with salt, pepper, parsley, and thyme.
- Top fish with slices of lemon, roll up tinfoil, and bake for 12 minutes.
