Lemon and Basil Picnic Cookies
Serves 8 – 290 Calories Per Serving – 18g fat/31g carbs/8g protein
Ingredients
- 1 Cup Almond Flour
- 1 Cup Oat Flour
- 1 Tsp Baking Soda
- 1/2 Tsp Sea Salt
- 1/4 Cup Olive Oil
- 3/4 Cup Xylitol
- 2 Eggs
- 1 Lemon
- 1/3 Cup Basil
- 1/4 cup Pistachios
Instructions
- Pre-heat oven to 350 and place parchment paper on baking sheet
- Grind all the xylitol minus 2 T in a spice grinder until fine
- Whisk together flours, baking soda, xylitol and salt
- Add in olive oil, eggs, lemon juice, and sliced basil, mixing well and form into sixteen cookies
- Grind pistachios in a spice grinder until fine and mix with the rest of the xylitol
- Roll cookies in pistachio mixture and then bake for ten minutes
