Lemon and Basil Picnic Cookies

Serves 8 – 290 Calories Per Serving – 18g fat/31g carbs/8g protein



  • 1 Cup Almond Flour
  • 1 Cup Oat Flour
  • 1 Tsp Baking Soda
  • 1/2 Tsp Sea Salt
  • 1/4 Cup Olive Oil
  • 3/4 Cup Xylitol
  • 2 Eggs
  • 1 Lemon
  • 1/3 Cup Basil
  • 1/4 cup Pistachios



  • Pre-heat oven to 350 and place parchment paper on baking sheet
  • Grind all the xylitol minus 2 T in a spice grinder until fine
  • Whisk together flours, baking soda, xylitol and salt
  • Add in olive oil, eggs, lemon juice, and sliced basil, mixing well and form into sixteen cookies
  • Grind pistachios in a spice grinder until fine and mix with the rest of the xylitol
  • Roll cookies in pistachio mixture and then bake for ten minutes
