Firecracker (Bang! Bang!) Cauliflower

Serves 4 – 280 Calories Per Serving – 14g fat/31g carbs/11g protein

 

Ingredients

  • 1 Head Cauliflower
  • 3/4 Cup Almond Flour
  • 1/2 Cup Tapioca Flour
  • 1 Tsp Paprika
  • 1 Cup Water
  • 4 Cups Mixed Greens
  • 4 Green Onions
  • 1/4 Cup White Wine Vinegar
  • 1/4 Cup Water
  • 1 Tsp Garlic Powder
  • 1 Tsp Ginger
  • 2 T Xylitol
  • 1/2 Tsp Red Pepper Flakes
  • 1/2 Tsp Cayenne Pepper
  • 1 T Sriracha
  • 1/2 Cup Plain Almond Yogurt
  • Sea Salt as Needed

 

Instructions

  • Pre-heat oven to 450 and place parchment paper on baking sheet
  • Mix together both flours, paprika, salt, and water together
  • Cut cauliflower into bite size pieces, dip in the batter, place on baking sheet, and bake for 25 minutes
  • Mix together vinegar, water, garlic powder, ginger, xylitol, red pepper flakes, cayenne, sriracha, yogurt, and salt
  • Assemble starting with mixed greens underneath, then cauliflower, then sriracha sauce, and top with diced green onion
