Firecracker (Bang! Bang!) Cauliflower
Serves 4 – 280 Calories Per Serving – 14g fat/31g carbs/11g protein
Ingredients
- 1 Head Cauliflower
- 3/4 Cup Almond Flour
- 1/2 Cup Tapioca Flour
- 1 Tsp Paprika
- 1 Cup Water
- 4 Cups Mixed Greens
- 4 Green Onions
- 1/4 Cup White Wine Vinegar
- 1/4 Cup Water
- 1 Tsp Garlic Powder
- 1 Tsp Ginger
- 2 T Xylitol
- 1/2 Tsp Red Pepper Flakes
- 1/2 Tsp Cayenne Pepper
- 1 T Sriracha
- 1/2 Cup Plain Almond Yogurt
- Sea Salt as Needed
Instructions
- Pre-heat oven to 450 and place parchment paper on baking sheet
- Mix together both flours, paprika, salt, and water together
- Cut cauliflower into bite size pieces, dip in the batter, place on baking sheet, and bake for 25 minutes
- Mix together vinegar, water, garlic powder, ginger, xylitol, red pepper flakes, cayenne, sriracha, yogurt, and salt
- Assemble starting with mixed greens underneath, then cauliflower, then sriracha sauce, and top with diced green onion
