Zucchini Garden of Roses Ravioli
Serves 3 – 370 Calories Per Serving – 23g fat/29g carbs/13g protein
Ingredients
- 1 Can Tomato Sauce
- 2 Zucchinis
- 2 Cups Spinach
- 1 Tsp Garlic Powder
- 8oz Almond Ricotta Cheese
- 1 Tsp Basil
- 1 Tsp Oregano
- 1/2 Cup Cherry Tomatoes
- 1/2 Cup Vegan Mozzarella Cheese
- 1/4 Cup Vegan Parmesan Cheese
- Sea Salt As Needed
Instructions
- Pre-heat oven to 400 and spread tomato sauce over the bottom of a large baking dish, sprinkling with sea salt
- Layer spinach over top of the tomato sauce
- Using a flat spiralizer blade, peel the zucchini into long ribbons and sprinkle with salt.
- Using five inches of ribbon at a time, form into 24 small bowls.
- In a bowl, mix together ricotta, salt, basil, and oregano and then scoop some into each of the zucchini bowls
- Stacking two bowls on top of each other, place the 12 zucchini flowers into the sauce
- Slice tomatoes and sprinkle around the flowers, topping with mozzarella and parmesan
- Bake for 20 minutes
