Below Zero Mushroom and Lentil Soup
Serves 3 – 300 Calories Per Serving – 2g fat/59g carbs/13g protein
Ingredients
- 4 Cups Vegetable Stock
- 1/2 Cup Red Lentils
- 1/2 Cup Brown Rice
- 1 Carton Cremini Mushrooms
- 1 Sweet Onion
- 1 Tsp Rosemary
- 1 Tsp Thyme
- 1/2 Tsp Pepper
- Sea Salt as Needed
Instructions
- Fill large pot with stock and over medium heat, cook lentils and rice for 20 minutes
- Dice onion and mushrooms and add with seasonings to pot, cooking for another ten minutes
