Stuffed and Squirreled Away Acorn Squash

Serves 1 – 460 Calories Per Serving – 26g Fat/61g Carbs/12g Protein



  • 1 Acorn Squash
  • 1/2 Tsp Garlic Powder
  • 1/2 Tsp Onion Powder
  • 1 T Olive Oil
  • 1/2 Sweet Onion
  • 1/2 Carton Crimini Mushrooms
  • 1/2 Tsp Pepper
  • 1/4 Cup Vegan Spreadable Cheese
  • Sea Salt as Needed



  • Pre-heat oven to 350 and place parchment paper on baking sheet
  • Cut squash open, gut, and drizzle with half of the olive oil, salt, garlic powder, and onion powder, baking for 25 minutes
  • Dice onion and mushrooms and place in a medium skillet with other half of olive oil, salt, and pepper, cooking until tender
  • Fill squash with mushrooms and onions, top with cheese, and bake for another five minutes
