Miso (Hungry) Pad Thai

Serves 4 – 430 Calories Per Serving – 19g fat/55g carbs/13g protein

Ingredients

  • 1 T Olive Oil
  • 1 Red Bell Pepper
  • 1 Zucchini
  • 1 Cup Bean Sprouts
  • 1 Container Brown Rice Pad Thai Noodles
  • 1/2 Cup Peanuts
  • 5 Green Onions
  • 2 Limes
  • 1/4 Cup Sunflower Butter
  • 1 T Liquid Aminos
  • 1 T Rice Wine Vinegar
  • 1 T Sriracha
  • 2 T Miso Paste
  • 1/4 Cup Water
  • 1 Tsp Ginger
  • 1 Tsp Garlic Powder
  • Sea Salt as Needed

 

Instructions

  • Slice pepper and zucchini into thin strips and add to a large skillet with olive oil, bean sprouts, garlic powder, ginger and salt, cooking until tender
  • Cook paste according to box directions
  • Add in sunflower butter, liquid aminos, vinegar, sriracha, miso, water, and one lime to veggies, and stir until thickened
  • Add in noodles and peanuts and stir well
  • Top with green onion and lime juice
