Miso (Hungry) Pad Thai
Serves 4 – 430 Calories Per Serving – 19g fat/55g carbs/13g protein
Ingredients
- 1 T Olive Oil
- 1 Red Bell Pepper
- 1 Zucchini
- 1 Cup Bean Sprouts
- 1 Container Brown Rice Pad Thai Noodles
- 1/2 Cup Peanuts
- 5 Green Onions
- 2 Limes
- 1/4 Cup Sunflower Butter
- 1 T Liquid Aminos
- 1 T Rice Wine Vinegar
- 1 T Sriracha
- 2 T Miso Paste
- 1/4 Cup Water
- 1 Tsp Ginger
- 1 Tsp Garlic Powder
- Sea Salt as Needed
Instructions
- Slice pepper and zucchini into thin strips and add to a large skillet with olive oil, bean sprouts, garlic powder, ginger and salt, cooking until tender
- Cook paste according to box directions
- Add in sunflower butter, liquid aminos, vinegar, sriracha, miso, water, and one lime to veggies, and stir until thickened
- Add in noodles and peanuts and stir well
- Top with green onion and lime juice
