Summer Picnic Paninis
Serves 2 – 400 Calories Per Serving – 19g fat/39g carbs/16g protein
Ingredients
- 1 T Olive Oil
- 2 Eggs
- 4 Slices Ezekiel Bread
- 1/4 Cup Vegan Mozzarella Cheese
- 1/2 Red Bell Pepper
- 1/2 Zucchini
- 1/4 Cup Plain Almond Yogurt
- 1 T Chili Paste
- 1 T Red Wine Vinegar
- 1 Tsp Garlic Powder
- Olive Oil Spray
- Sea Salt as Needed
Instructions
- Heat a small pot of water to boiling on high heat, add in eggs, turn of heat, and let sit for 15 minutes
- Place eggs in a ice bath and let cool for 15 minutes
- Slice zucchini and place in a large skillet with olive oil, sprinkling with salt and garlic
- Let cook on one side until golden brown, flip, and set aside
- Add in red pepper to same skillet with red wine vinegar, cooking until tender
- Toast bread, peel eggs and slice
- Mix together yogurt and chili paste
- Assemble sandwich, starting with yogurt sauce, then zucchini, then red pepper, then egg, and top with mozzarella
- Spray George foreman with olive oil, and let the panini brown for three minutes
