Ooey-Gooey Spinach Dip

Serves 4 – 310 Calories Per Serving – 15g fat/31g carbs/8g protein



  • 1 T Olive Oil
  • 6 Cups Spinach
  • 1 Bag Riced Cauliflower
  • 1 Sweet Onion
  • 1/2 Cup Vegan Mozzarella
  • 1/2 Cup Almond Milk
  • 1 Tsp Pepper
  • 4oz Quinoa Chips
  • Sea Salt as Needed



  • Heat olive oil in a cast iron skillet over medium high heat and wilt spinach
  • Dice onion and add to spinach mixture with salt and pepper, cooking until tender
  • Add in riced cauliflower, mozzarella, and almond milk, and stir until gooey
  • Serve with quinoa chips
