Ooey-Gooey Spinach Dip
Serves 4 – 310 Calories Per Serving – 15g fat/31g carbs/8g protein
Ingredients
- 1 T Olive Oil
- 6 Cups Spinach
- 1 Bag Riced Cauliflower
- 1 Sweet Onion
- 1/2 Cup Vegan Mozzarella
- 1/2 Cup Almond Milk
- 1 Tsp Pepper
- 4oz Quinoa Chips
- Sea Salt as Needed
Instructions
- Heat olive oil in a cast iron skillet over medium high heat and wilt spinach
- Dice onion and add to spinach mixture with salt and pepper, cooking until tender
- Add in riced cauliflower, mozzarella, and almond milk, and stir until gooey
- Serve with quinoa chips
