Breakfast For Dinner – Loaded Hashbrown Waffles
Serves 3 – 500 Calories Per Serving – 18g fat/65g carbs/22g protein
Ingredients
- Olive Oil Spray
- 3 Potatoes
- 1 Package Tempeh Bacon
- 1 T Olive Oil
- 1 T Tapioca Flour
- 1/4 Cup Nutritional Yeast
- 1/2 Tsp Pepper
- 1 Avocado
- 1/2 Cup Vegan Cheddar Cheese
- 1/2 Cup Plain Almond Yogurt
- 2 Tsp Sriracha
- 1 Lime
- 3 Green Onions
- Sea Salt as Needed
Instructions
- Shred potatoes with a grater, rinse with cold water, then squeeze out excess water
- Dice tempeh and add into bowl with potato, olive oil, tapioca flour, yeast, pepper, and salt
- Spray waffle iron with olive oil spray and scoop in 1/3 of the mixture, cooking until crispy
- Mix together yogurt, lime juice, Sriracha, and salt
- Top waffles with diced avocado, cheddar, diced green onion, and yogurt mixture
