Breakfast For Dinner – Loaded Hashbrown Waffles

Serves 3 – 500 Calories Per Serving – 18g fat/65g carbs/22g protein



  • Olive Oil Spray
  • 3 Potatoes
  • 1 Package Tempeh Bacon
  • 1 T Olive Oil
  • 1 T Tapioca Flour
  • 1/4 Cup Nutritional Yeast
  • 1/2 Tsp Pepper
  • 1 Avocado
  • 1/2 Cup Vegan Cheddar Cheese
  • 1/2 Cup Plain Almond Yogurt
  • 2 Tsp Sriracha
  • 1 Lime
  • 3 Green Onions
  • Sea Salt as Needed



  • Shred potatoes with a grater, rinse with cold water, then squeeze out excess water
  • Dice tempeh and add into bowl with potato, olive oil, tapioca flour, yeast, pepper, and salt
  • Spray waffle iron with olive oil spray and scoop in 1/3 of the mixture, cooking until crispy
  • Mix together yogurt, lime juice, Sriracha, and salt
  • Top waffles with diced avocado, cheddar, diced green onion, and yogurt mixture
