LIT Black Bean Enchiladas
Serves 4 – 400 Calories Per Serving – 17g fat/50g carbs/12g protein
Ingredients
- 1 1/2 T Olive Oil
- 1/2 Red Onion
- 1 Tsp Garlic Powder
- 1 Jalapeno
- 1 Tsp Cumin
- 1 Tsp Pepper
- 1 Container Cashew Cream Cheese
- 2 T Fresh Cilantro
- 1 Can Black Beans
- 1 Can Green Chilies
- 1/4 Cup Green Enchiladas Sauce
- 4 Brown Rice Tortillas
- Sea Salt as Needed
Instructions
- Pre-heat oven to 350 and spray glass baking dish with olive oil spray
- Dice onion and jalapeño and add into a large skillet with half of olive oil, garlic powder, salt, cumin, and pepper
- Once tender, add cream cheese and melt down
- Add cream cheese mixture to blender with cilantro and blend until smooth
- In the same skillet, add other half of olive oil, black beans, green chilis, and salt, sautéing until warm
- Assemble enchiladas in tortillas, starting with cream cheese mixture, then black bean mix, and then enchilada sauce and line them in pan
- Top with extra cream cheese and enchilada sauce and bake for 20 minutes
