Sweet Potato Toasts with Walnuts and Greens

Serves 1 – 600 Calories Per Serving – 36g fat/60g carbs/10g protein

 

Ingredients

  • 1 T Olive Oil
  • 1 Sweet Potato
  • 1 Tsp Paprika
  • 1 Tsp Garlic Powder
  • 1/4 Cup Walnuts
  • 1 Cup Mixed Greens
  • 1/4 Cup Vegan Parmesan Cheese
  • Sea Salt as Needed

 

Instructions

  • Pre-heat oven to 350 and place parchment paper on baking sheet
  • Slice the sweet potato into thin slices and top with olive oil and seasonings, baking for 15 minutes
  • Top with parmesan, mixed greens, and walnuts
