Sweet Potato Toasts with Walnuts and Greens

Ingredients
- 1 T Olive Oil
- 1 Sweet Potato
- 1 Tsp Paprika
- 1 Tsp Garlic Powder
- 1/4 Cup Walnuts
- 1 Cup Mixed Greens
- 1/4 Cup Vegan Parmesan Cheese
- Sea Salt as Needed
Instructions
- Pre-heat oven to 350 and place parchment paper on baking sheet
- Slice the sweet potato into thin slices and top with olive oil and seasonings, baking for 15 minutes
- Top with parmesan, mixed greens, and walnuts
