Savory Squash and Green Onion Omelette

Serves 2 – 280 Calories Per Serving – 21g fat/7g carbs/15g protein



  • 4 Eggs
  • 1 Delicata Squash
  • 4 Green Onions
  • 1/2 Tsp Pepper
  • 1 T Olive Oil
  • 1/2 Cup Plain Almond Yogurt
  • Sea Salt as Needed



  • Dice squash and green onion and add into a small skillet with olive oil, cooking until tender
  • In a bowl, beat eggs and salt and pepper until well mixed and pour into skillet
  • Cook on medium-low heat for four minutes on each side and serve with yogurt
