Savory Squash and Green Onion Omelette
Serves 2 – 280 Calories Per Serving – 21g fat/7g carbs/15g protein
Ingredients
- 4 Eggs
- 1 Delicata Squash
- 4 Green Onions
- 1/2 Tsp Pepper
- 1 T Olive Oil
- 1/2 Cup Plain Almond Yogurt
- Sea Salt as Needed
Instructions
- Dice squash and green onion and add into a small skillet with olive oil, cooking until tender
- In a bowl, beat eggs and salt and pepper until well mixed and pour into skillet
- Cook on medium-low heat for four minutes on each side and serve with yogurt
