Nest-Egg Baked Sweet Potatoes

Serves 1 – 340 Calories Per Serving – 13g fat/43g carbs/15g protein



  • 1 Sweet Potato
  • 2 Eggs
  • 2T Vegan Parmesan Cheese
  • 1/2 Tsp Garlic Powder
  • 1/2 Tsp Onion Powder
  • 1/4 Tsp Pepper
  • Sea Salt as Needed



  • Pre-heat oven to 400 and place parchment paper on baking sheet
  • Wrap sweet potatoes in wet paper towels and microwave for eight minutes
  • Cut potatoes in half, scoop out the insides, and place on baking sheet
  • Crack an egg into each half, season, and top with parmesan
  • Bake for 18 minutes, or until white is set and yolk is runny
