Nest-Egg Baked Sweet Potatoes
Serves 1 – 340 Calories Per Serving – 13g fat/43g carbs/15g protein
Ingredients
- 1 Sweet Potato
- 2 Eggs
- 2T Vegan Parmesan Cheese
- 1/2 Tsp Garlic Powder
- 1/2 Tsp Onion Powder
- 1/4 Tsp Pepper
- Sea Salt as Needed
Instructions
- Pre-heat oven to 400 and place parchment paper on baking sheet
- Wrap sweet potatoes in wet paper towels and microwave for eight minutes
- Cut potatoes in half, scoop out the insides, and place on baking sheet
- Crack an egg into each half, season, and top with parmesan
- Bake for 18 minutes, or until white is set and yolk is runny
