Double The Beans, Twice The Taste Salad

Serves 3 – 410 Calories Per Serving – 18g Fat/47g Carbs/18g Protein

 

Ingredients

  • 1/2 Cup Cashews
  • 1/2 Cup Water
  • 1 T Olive Oil
  • 1 Lime
  • 1 T Honey Mustard
  • 1 Tsp Garlic Powder
  • 2 Tsp Hot Sauce
  • 1/2 Tsp Pepper
  • 2 Romaine Hearts
  • 1 Can Black Beans
  • 3/4 Cup Falafel Crunchy Chickpeas
  • Sea Salt as Needed

 

Instructions

  • Slice Romaine and add into a large bowl
  • Drain and rinse black beans and pour them into the bowl along with the crunchy chickpeas
  • Mix the first eight ingredients and salt together in a blender and pour over salad
