I’m Absolutely Stuffed…Mushrooms

Serves 3 – 210 Calories Per Serving – 6g Fat/37g Carbs/5g Protein

Ingredients

  • 3 Portobello Mushrooms
  • 1/2 Cup Brown Rice
  • 1 1/2 Vegetable Stock
  • 1/2 Sweet Onion
  • 2 Tsp Olive Oil
  • 1 Tsp Garlic Powder
  • 1/2 Cup Vegan Parmesan Cheese
  • Sea Salt as Needed

 

Instructions

  • Pre-heat oven to 350 and place parchment paper on top of baking sheet
  • Cook rice in a rice cooker with vegetable stock and diced onion
  • Wash portobellos, drizzle with olive oil, and season with garlic powder and salt
  • Add parmesan on top of mushrooms and bake for 15 minutes
  • Top with onion and rice mixture to serve
