I’m Absolutely Stuffed…Mushrooms
Serves 3 – 210 Calories Per Serving – 6g Fat/37g Carbs/5g Protein
Ingredients
- 3 Portobello Mushrooms
- 1/2 Cup Brown Rice
- 1 1/2 Vegetable Stock
- 1/2 Sweet Onion
- 2 Tsp Olive Oil
- 1 Tsp Garlic Powder
- 1/2 Cup Vegan Parmesan Cheese
- Sea Salt as Needed
Instructions
- Pre-heat oven to 350 and place parchment paper on top of baking sheet
- Cook rice in a rice cooker with vegetable stock and diced onion
- Wash portobellos, drizzle with olive oil, and season with garlic powder and salt
- Add parmesan on top of mushrooms and bake for 15 minutes
- Top with onion and rice mixture to serve
