Dreamy Tahini Sushi Roll

Serves 2 – 430 Calories Per Serving – 15g fat/60g carbs/9g protein

 

Ingredients

  • 1 Cup Short Grain Brown Rice
  • 2 Cups Water
  • 2 Nori Sheets
  • 1 Carrot
  • 1/2 Avocado
  • 1 T Rice Wine Vinegar
  • 1 T Mirin
  • 1 Tsp Sea Salt
  • 1/4 Cup Tahini
  • 1 Tsp Ginger
  • 1/2 Lemon
  • 2 T Monk Fruit Maple Syrup
  • 1 T Liquid Aminos
  • 1 Tsp Garlic Powder
  • 1 T Water

 

Instructions

  • Cook rice and water in a rice cooker until tender and mix in mirin, vinegar, and salt
  • Slice carrot and avocado into thin strips
  • Press sushi rice in a thin layer over nori sheets
  • Lay down carrots and avocado and roll nori into a tight roll
  • Mix together the last seven ingredients and serve with sushi
