Sweet Potato Poutine, Eh?
Serves 3 – 460 Calories – 17g fat/62g carbs/17g protein
Ingredients
- 2 Tsp Olive Oil
- 2 Sweet Potatoes
- 1 Tsp Paprika
- 1 Tsp Cumin
- 1 Tsp Onion Powder
- 1 Tsp Garlic Powder
- 1/2 Tsp Cayenne Pepper
- 1 Avocado
- 1 Lime
- 1/2 Cherry Tomatoes
- 1 Can Black Beans
- 1/4 Cup Red Onion
- 1/2 Cup Vegan Cheddar Cheese
- 1/2 Plain Almond Yogurt
- Sea Salt as Needed
Instructions
- Pre-heat oven to 350 and line baking sheet with parchment paper
- Slice sweet potatoes into fries and place on baking sheet, drizzling with olive oil, seasonings, and salt, baking for 25 minutes
- Dice tomato, avocado, and onion
- Build the poutine, starting with fries, half the yogurt and lime juice, tomatoes, avocados, onion, black beans, cheese, and top with the other half of the yogurt and lime juice.
