Sweet Potato Poutine, Eh?

Serves 3 – 460 Calories – 17g fat/62g carbs/17g protein

 

Ingredients

  • 2 Tsp Olive Oil
  • 2 Sweet Potatoes
  • 1 Tsp Paprika
  • 1 Tsp Cumin
  • 1 Tsp Onion Powder
  • 1 Tsp Garlic Powder
  • 1/2 Tsp Cayenne Pepper
  • 1 Avocado
  • 1 Lime
  • 1/2 Cherry Tomatoes
  • 1 Can Black Beans
  • 1/4 Cup Red Onion
  • 1/2 Cup Vegan Cheddar Cheese
  • 1/2 Plain Almond Yogurt
  • Sea Salt as Needed

 

Instructions

  • Pre-heat oven to 350 and line baking sheet with parchment paper
  • Slice sweet potatoes into fries and place on baking sheet, drizzling with olive oil, seasonings, and salt, baking for 25 minutes
  • Dice tomato, avocado, and onion
  • Build the poutine, starting with fries, half the yogurt and lime juice, tomatoes, avocados, onion, black beans, cheese, and top with the other half of the yogurt and lime juice.
