Back To Basics Black Bean Soup
Serves 4 – 250 Calories Per Serving – 4g fat/40g carbs/13g protein
Ingredients
- 2 Cans Black Beans
- 4 Cups Vegetable Stock
- 1 Sweet Onion
- 1 Tsp Garlic Powder
- 1 Yellow Bell Pepper
- 2 Tsp Cumin
- 1 Tsp Chili Powder
- 1 Tsp Pepper
- 1 Cup Plain Almond Yogurt
- Sea Salt as Needed
Instructions
- In a large pot, add vegetable broth and seasonings and turn heat to medium-high
- Slice onion and pepper and add to the pot, cooking for 10 minutes, or until tender
- Add beans and cook for another five minutes
- Use immersion blender to mix until smooth and serve with yogurt
