Fully Loaded Stuffed Sweet Potatoes

Serves 3 – 570 Calories Per Serving – 19g fat/81g carbs/15g protein



  • 2 Tsp Olive Oil
  • 3 Sweet Potatoes
  • 1 Can Chickpeas
  • 1/2 Can Pumpkin Puree
  • 1 Cup Plain Almond Yogurt
  • 1/2 Cup Vegan Parmesan Cheese
  • 1 Avocado
  • 1 Tsp Cumin
  • 1 Tsp Garlic Powder
  • 1 Tsp Paprika
  • 1 Tsp Coriander
  • Sea Salt as Needed



  • Pre-heat oven to 400 degrees and place parchment paper on baking sheet
  • Wrap sweet potatoes in wet paper towel and microwave for ten minutes
  • Scoop out insides of the sweet potatoes, place on baking sheet, and season with salt
  • In a small skillet, heat olive oil with chickpeas, cumin, garlic, paprika, coriander, and salt, cooking until tender
  • Mix together pumpkin puree, half of yogurt, and salt
  • Mix together avocado, half of yogurt, and salt
  • Assemble sweet potatoes, filling with chickpeas, topping with pumpkin sauce and parmesan
  • Bake for ten minutes and serve with avocado sauce
