Tasty and Tangy Veggie Bruschetta
Serves 2 – 440 Calories Per Serving – 22g fat/46g carbs/16g protein
Ingredients
- 1 Cubanelle Pepper
- 1/2 Sweet Onion
- 1 Roasted Red Pepper
- 1 Cup Artichoke Hearts
- 1 Container Almond Milk Feta Cheese
- 3 T Red Wine Vinegar
- 1 T Olive Oil
- 1/2 Tsp Pepper
- 4 Slices Ezekiel Bread
- Sea Salt as Needed
Instructions
- Slice onion and peppers and place in a large skillet with olive oil half of vinegar, cooking until tender
- Add artichokes, salt, and pepper and cook for another three minutes
- Toast bread and top with vegetables, finishing with the feta and rest of vinegar
