Tasty and Tangy Veggie Bruschetta

Serves 2 – 440 Calories Per Serving – 22g fat/46g carbs/16g protein



  • 1 Cubanelle Pepper
  • 1/2 Sweet Onion
  • 1 Roasted Red Pepper
  • 1 Cup Artichoke Hearts
  • 1 Container Almond Milk Feta Cheese
  • 3 T Red Wine Vinegar
  • 1 T Olive Oil
  • 1/2 Tsp Pepper
  • 4 Slices Ezekiel Bread
  • Sea Salt as Needed



  • Slice onion and peppers and place in a large skillet with olive oil half of vinegar, cooking until tender
  • Add artichokes, salt, and pepper and cook for another three minutes
  • Toast bread and top with vegetables, finishing with the feta and rest of vinegar
