Mexican Caesar Salad with Avocado Dressing

Ingredients
- Olive Oil Spray
- 1 Avocado
- 1/4 Cup Plain Almond Yogurt
- 1 Lime
- 1/4 Cup Pumpkin Seeds
- 1 Cup Water
- 2 Brown Rice Tortillas
- 2 Heads Romaine
- 1 Container Almond Feta Cheese
- Sea Salt as Needed
Instructions
- Pre-heat oven to 350 and line baking sheet with parchment paper
- Cut tortillas into small strips and lay out on baking sheet, spraying with olive oil and salt and bake for eight minutes
- In a blender, mix together avocado, yogurt, lime, pumpkin seeds, water, and salt until smooth
- Slice romaine and place in a large bowl with dressing, crumbled feta, and crunchy tortillas, mixing well
