Mexican Caesar Salad with Avocado Dressing

Serves 3 – 370 Calories Per Serving – 24g fat/27g carbs/11g protein



  • Olive Oil Spray
  • 1 Avocado
  • 1/4 Cup Plain Almond Yogurt
  • 1 Lime
  • 1/4 Cup Pumpkin Seeds
  • 1 Cup Water
  • 2 Brown Rice Tortillas
  • 2 Heads Romaine
  • 1 Container Almond Feta Cheese
  • Sea Salt as Needed



  • Pre-heat oven to 350 and line baking sheet with parchment paper
  • Cut tortillas into small strips and lay out on baking sheet, spraying with olive oil and salt and bake for eight minutes
  • In a blender, mix together avocado, yogurt, lime, pumpkin seeds, water, and salt until smooth
  • Slice romaine and place in a large bowl with dressing, crumbled feta, and crunchy tortillas, mixing well
