Buffalo Cauliflower Taco Bowl

Serves 3 – 360 Calories Per Serving – 21g fat/36g carbs/7g protein



  • 1 Head Cauliflower
  • 2 T Olive Oil
  • 1/4 Cup Tapioca Flour
  • 2 T Water
  • 1 Tsp Garlic Powder
  • 1 Tsp Chili Powder
  • 1 Tsp Pepper
  • 1/4 Cup Hot Sauce
  • 3 Brown Rice Tortillas
  • 3 Cups Spinach
  • 1 Avocado
  • 1/2 Cup Plain Almond Yogurt
  • Sea Salt as Needed



  • Pre-heat oven to 400 and line baking sheet with parchment paper
  • Mix together oil, water, flour, garlic, chili, salt, pepper, and half of hot sauce
  • Cut cauliflower into bite sized pieces, dip in hot sauce and place on parchment paper, baking for 30 minutes
  • Assemble tacos bowls, starting with tortillas, then spinach, cauliflower, other half of hot sauce, and diced avocado and yogurt
