Buffalo Cauliflower Taco Bowl
Serves 3 – 360 Calories Per Serving – 21g fat/36g carbs/7g protein
Ingredients
- 1 Head Cauliflower
- 2 T Olive Oil
- 1/4 Cup Tapioca Flour
- 2 T Water
- 1 Tsp Garlic Powder
- 1 Tsp Chili Powder
- 1 Tsp Pepper
- 1/4 Cup Hot Sauce
- 3 Brown Rice Tortillas
- 3 Cups Spinach
- 1 Avocado
- 1/2 Cup Plain Almond Yogurt
- Sea Salt as Needed
Instructions
- Pre-heat oven to 400 and line baking sheet with parchment paper
- Mix together oil, water, flour, garlic, chili, salt, pepper, and half of hot sauce
- Cut cauliflower into bite sized pieces, dip in hot sauce and place on parchment paper, baking for 30 minutes
- Assemble tacos bowls, starting with tortillas, then spinach, cauliflower, other half of hot sauce, and diced avocado and yogurt
