Veggie Delight Chickpea Toastadas
Serves 3 – 480 Calories Per Serving – 19g fat/66g carbs/13g protein
Ingredients
- 1 T Olive Oil
- 1 Sweet Potato
- 1 Poblano Pepper
- 1 Can Chickpeas
- 1 Sweet Onion
- 1 Red Bell Pepper
- 1/2 Tsp Pepper
- 1/2 Tsp Chili Powder
- 1/2 Tsp Cumin
- 1/2 Tsp Paprika
- 2 T Water
- 1 Lime
- 1 Avocado
- 1 Tsp Garlic Powder
- 3 Brown Rice Tortillas
- 3/4 Cup Plain Almond Yogurt
- Sea Salt as Needed
Instructions
- Pre-heat oven to 425 and place parchment paper on baking sheet
- Dice sweet potato and both peppers and lay out on baking sheet, drizzling half of olive oil over top with salt, pepper, chili powder, cumin, and paprika, baking for 20 minutes
- Dice onion and add to large skillet with other half of olive oil, sautéing until tender
- Add chickpeas to skillet with water, salt, and garlic powder, mashing to a paste
- On another baking sheet, add parchment paper and tortillas and spray with olive oil, baking for eight minutes
- Assemble toastadas starting with chickpea mixture, then veggies, then diced avocado, then yogurt, and a squeeze of lime
