Ravage The Garden Summer Pasta
Serves 3 – 630 Calories Per Serving – 16g fat/109g carbs/13g protein
Ingredients
- 1 Box Brown Rice Pasta
- 1 Can Sweet Corn
- 1 Zucchini
- 1 Cup Cherry Tomatoes
- 2 T Olive Oil
- 1/4 Cup Vegan Parmesan Cheese
- 1 Tsp Garlic Powder
- 1/2 Tsp Red Pepper Flakes
- 1/2 Tsp Pepper
- Sea Salt as Needed
Instructions
- Cook pasta according to box direction and reserve 1/2 cup of pasta water
- Dice zucchini and tomatoes and add into a large skillet with half of olive oil over medium heat
- Add in corn, seasonings, and salt, and cook until zucchini is browned
- Add pasta to skillet along with rest of olive oil, parmesan, and reserved water, and let reduce for three minutes
