Ravage The Garden Summer Pasta

Serves 3 – 630 Calories Per Serving – 16g fat/109g carbs/13g protein

 

Ingredients

  • 1 Box Brown Rice Pasta
  • 1 Can Sweet Corn
  • 1 Zucchini
  • 1 Cup Cherry Tomatoes
  • 2 T Olive Oil
  • 1/4 Cup Vegan Parmesan Cheese
  • 1 Tsp Garlic Powder
  • 1/2 Tsp Red Pepper Flakes
  • 1/2 Tsp Pepper
  • Sea Salt as Needed

 

Instructions

  • Cook pasta according to box direction and reserve 1/2 cup of pasta water
  • Dice zucchini and tomatoes and add into a large skillet with half of olive oil over medium heat
  • Add in corn, seasonings, and salt, and cook until zucchini is browned
  • Add pasta to skillet along with rest of olive oil, parmesan, and reserved water, and let reduce for three minutes
