Herby Quinoa Cakes with Dill Dressing
Serves 3 – 500 Calories Per Serving – 24g Fat/56g Carbs/12g Protein
Ingredients
- Olive Oil Spray
- 2 Cups Oat Flour
- 1 Tsp Baking Powder
- 1/2 Tsp Pepper
- 1 Tsp Garlic Powder
- 1 Tsp Cumin
- 1 Tsp Paprika
- 1 T Fresh Dill
- 1/2 Cup Quinoa
- 1/4 Cup Olive Oil
- 1/2 Cup Plain Almond Yogurt
- Sea Salt as Needed
Instructions
- In a rice cooker, cook quinoa according to package instructions
- In a large bowl, stir together flour, baking powder, and seasonings until well combined
- Add in quinoa, milk, and olive oil, stirring until a batter forms
- In a large skillet, spray oil olive to coat and turn to medium heat
- Once hot, scoop batter into nine separate cakes, cooking each until golden on one side and flipping
- Mix together yogurt, parsley, dill, and salt and serve with the hot cakes
