Mean Green Broccoli and Quinoa Patties
Serves 3 – 420 Calories Per Serving – 14g Fat/56g Carbs/18g Protein
Ingredients
- 2 Heads Broccoli
- 1/2 Cup Quinoa
- 1 Can Chickpeas
- 1 T Olive Oil
- 2 T Nutritional Yeast
- 1/2 Cup Chickpea Flour
- 1 Tsp Garlic Powder
- 1 T Honey Mustard
- 1 Cup Plain Almond Yogurt
- 1 T Chipotle Sauce
- Sea Salt as Needed
Instructions
- In a rice cooker, cook quinoa according to package instructions
- Cut up broccoli and steam until tender, drain water, and add into food processor
- Add in chickpeas, mustard, nutritional yeast, garlic powder, and salt, pulsing until smooth
- Empty contents into a bowl and mix in flour and quinoa
- In a large skillet, heat olive oil over medium heat, form batter into nine patties, and cook for three minutes on each side, or until golden brown
- Mix together yogurt, chipotle, and salt and serve with patties
