Creamy Tahini Pasta with Sweet Potato and Kale

Serves 4 – 530 Calories Per Serving – 15g Fat/84g Carbs/15g Protein

 

Ingredients

  • 1 T Olive Oil
  • 1 Box Brown Rice Pasta
  • 1 Sweet Potato
  • 1 Bunch Kale
  • 4 Green Onions
  • 1/2 Tsp Pepper
  • 1 Tsp Garlic Powder
  • 1/2 Cup Tahini
  • 1/2 Cup Water
  • 1 Lemon
  • 1/4 Cup Nutritional Yeast
  • Sea Salt as Needed

 

Instructions

  • Bring pot of water to a boil and cook pasta according to directions
  • Dice sweet potato and add to a large skillet with olive oil, salt, garlic powder, and pepper, cooking until almond tender, and then adding in kale
  • Mix together tahini, water, lemon, yeast, and salt
  • Drain the noodles and place in skillet with veggies and mix together with sauce
