Creamy Tahini Pasta with Sweet Potato and Kale
Serves 4 – 530 Calories Per Serving – 15g Fat/84g Carbs/15g Protein
Ingredients
- 1 T Olive Oil
- 1 Box Brown Rice Pasta
- 1 Sweet Potato
- 1 Bunch Kale
- 4 Green Onions
- 1/2 Tsp Pepper
- 1 Tsp Garlic Powder
- 1/2 Cup Tahini
- 1/2 Cup Water
- 1 Lemon
- 1/4 Cup Nutritional Yeast
- Sea Salt as Needed
Instructions
- Bring pot of water to a boil and cook pasta according to directions
- Dice sweet potato and add to a large skillet with olive oil, salt, garlic powder, and pepper, cooking until almond tender, and then adding in kale
- Mix together tahini, water, lemon, yeast, and salt
- Drain the noodles and place in skillet with veggies and mix together with sauce
