Pumpkin Bites with Tangy Turmeric Dip
Serves 2 – 330 Calories Per Serving – 8g Fat/51g Carbs/14g Protein
Ingredients
- Olive Oil Spray
- 1 Can Pumpkin Puree
- 1 Carrot
- 1 Sweet Onion
- 1 Tsp Parsley
- 1 Tsp Cumin
- 1 Tsp Garlic Powder
- 1 Tsp Baking Powder
- 1 Cup Almond Yogurt
- 1 Tsp Turmeric
- 1 Tsp Ginger
- 1 Tsp Pepper
- 1 Lemon
- Sea Salt as Needed
Instructions
- Pre-heat oven to 350 and line baking sheet with parchment paper
- Dice carrot and onion and add to blender with pumpkin, parsley, cumin, garlic powder, and salt and pulse until fine
- Pour mixture into a large bowl and mix together with flour
- Form into small balls and lay out on baking sheet, spray with olive oil, and bake for 20 minutes
- Mix together the last seven ingredients and serve with pumpkin bites
