White Bean and Mushroom Crostini

Serves 2 – 470 Calories Per Serving – 14g Fat/72g Carbs/22g Protein


  • 1 T Olive Oil
  • 1 Package Crimini Mushrooms
  • 1 Can Cannellini Beans
  • 1/2 Sweet Onion
  • 1/2 Cup Vegan Mozzarella Cheese
  • 2 Tsp Fresh Thyme
  • 2 Tsp Fresh Sage
  • 1/2 Tsp Pepper
  • 4 Slices Ezekiel Bread
  • Sea Salt as Needed


  • Dice onion and mushrooms and add to a large skillet with olive oil, cooking over medium heat
  • Add beans, fresh herbs, cheese, and seasonings, cooking until tender
  • Toast bread and top with veggie mixture
