White Bean and Mushroom Crostini

Ingredients
- 1 T Olive Oil
- 1 Package Crimini Mushrooms
- 1 Can Cannellini Beans
- 1/2 Sweet Onion
- 1/2 Cup Vegan Mozzarella Cheese
- 2 Tsp Fresh Thyme
- 2 Tsp Fresh Sage
- 1/2 Tsp Pepper
- 4 Slices Ezekiel Bread
- Sea Salt as Needed
Instructions
- Dice onion and mushrooms and add to a large skillet with olive oil, cooking over medium heat
- Add beans, fresh herbs, cheese, and seasonings, cooking until tender
- Toast bread and top with veggie mixture
