Nicely Spicy Peppers and Squash Bowl

Ingredients
- 1 T Olive Oil
- 1 Cup Brown Rice
- 1 Lime
- 1 Poblano Pepper
- 1 Red Onion
- 1 Yellow Squash
- 1 Tsp Garlic Powder
- 1 Tsp Chili Powder
- 1/2 Tsp Pepper
- 6oz Almond Cream Cheese
- 6 T Chipotle Hummus
Instructions
- Cook rice according to package instructions in a rice cooker
- Dice squash, onion, and poblano and add to a large skillet with olive oil and seasonings, cooking until tender
- Assemble bowl, starting with rice, then veggies, then topping with hummus and almond cream cheese, and finish with lime juice
