Nicely Spicy Peppers and Squash Bowl

Serves 3 – 530 Calories Per Serving – 24g Fat/74g Carbs/13g Protein



  • 1 T Olive Oil
  • 1 Cup Brown Rice
  • 1 Lime
  • 1 Poblano Pepper
  • 1 Red Onion
  • 1 Yellow Squash
  • 1 Tsp Garlic Powder
  • 1 Tsp Chili Powder
  • 1/2 Tsp Pepper
  • 6oz Almond Cream Cheese
  • 6 T Chipotle Hummus



  • Cook rice according to package instructions in a rice cooker
  • Dice squash, onion, and poblano and add to a large skillet with olive oil and seasonings, cooking until tender
  • Assemble bowl, starting with rice, then veggies, then topping with hummus and almond cream cheese, and finish with lime juice
