Savory, Creamy, and Tangy Cauliflower Tostadas

Ingredients
- 1 Head Cauliflower
- 1/2 Cup Oatmeal
- 1 Tsp Chili Powder
- 1 Tsp Paprika
- 1 Tsp Cumin
- 1 Tsp Garlic Powder
- 1/2 Tsp Pepper
- 1/2 Cup Unsweetened Almond Milk
- 1/4 Cup Chickpea Flour
- 1 Lime
- 1 Cup Red Cabbage
- 2 Tsp White Wine Vinegar
- 1 T Honey
- 1 Avocado
- 1/2 Cup Plain Almond Yogurt
- 3 Brown Rice Tortillas
- Sea Salt as Needed
Instructions
- Pre-heat oven to 400 and place parchment paper on baking sheet
- Mix together oats, seasonings, and salt in a small container
- Whisk together milk and flour in a separate container
- Cut cauliflower into bite size pieces and place in milk container, closing and shaking well until all pieces are coated
- Place cauliflower in oatmeal container and shake well until all pieces are coated
- Place on baking sheet and bake for 25 minutes
- Slice cabbage thinly and toss with honey, vinegar, half of lime juice, and salt
- Mash avocado and mix with yogurt, salt, and half of lime juice
- Assemble tostadas starting with the avocado sauce, then cabbage slaw, and top with cauliflower
