Savory, Creamy, and Tangy Cauliflower Tostadas

Serves 3 – 390 Calories Per Serving – 14g Fat/57g Carbs/11g Protein

Ingredients

  • 1 Head Cauliflower
  • 1/2 Cup Oatmeal
  • 1 Tsp Chili Powder
  • 1 Tsp Paprika
  • 1 Tsp Cumin
  • 1 Tsp Garlic Powder
  • 1/2 Tsp Pepper
  • 1/2 Cup Unsweetened Almond Milk
  • 1/4 Cup Chickpea Flour
  • 1 Lime
  • 1 Cup Red Cabbage
  • 2 Tsp White Wine Vinegar
  • 1 T Honey
  • 1 Avocado
  • 1/2 Cup Plain Almond Yogurt
  • 3 Brown Rice Tortillas
  • Sea Salt as Needed

Instructions

  • Pre-heat oven to 400 and place parchment paper on baking sheet
  • Mix together oats, seasonings, and salt in a small container
  • Whisk together milk and flour in a separate container
  • Cut cauliflower into bite size pieces and place in milk container, closing and shaking well until all pieces are coated
  • Place cauliflower in oatmeal container and shake well until all pieces are coated
  • Place on baking sheet and bake for 25 minutes
  • Slice cabbage thinly and toss with honey, vinegar, half of lime juice, and salt
  • Mash avocado and mix with yogurt, salt, and half of lime juice
  • Assemble tostadas starting with the avocado sauce, then cabbage slaw, and top with cauliflower
