Fack and Cheese
Serves 8 – 470 Calories Per Serving – 9g Fat/85g Carbs/15g Protein
Ingredients
- 1 Sweet Potato
- 1 Head Cauliflower
- 1 Butternut Squash
- 1 Tsp Garlic Powder
- 1 Shallot
- 1/2 Cup Almonds
- 1/4 Cup Nutritional Yeast
- 1/2 Cup Vegan Cheddar Cheese
- 1 Tsp Paprika
- 1 T Olive Oil
- 1 Lemon
- 2 Boxes Brown Rice Pasta
- 1 Tsp Pepper
- Sea Salt as Needed
Instructions
- Dice sweet potato, squash, shallot, and cauliflower and place into a large pot with almonds and fill with water to cover
- Bring to a boil, cook until tender, and strain, reserving 1 1/2 cup cooking water
- Place water and veggies in a blender and mix until smooth
- Add in nutritional yeast, cheese, olive oil, lemon juice, and seasonings, blending to mix
- Cook pasta according to directions and serve with sauce
