Rainbow Roasted Carrots and Hazelnuts

Serves 2 – 320 Calories Per Serving – 24g fat/19g carbs/7g protein



  • Olive Oil Spray
  • 1 Bunch Carrots
  • 1 T Olive Oil
  • 1 Tsp Pepper
  • 1/4 Cup Hazelnuts
  • 1 T Sesame Seeds
  • 1/2 Tsp Coriander
  • 1/2 Tsp Cumin
  • 1 Cup Plain Almond Yogurt
  • 2 T Harissa
  • 1/2 Lemon
  • Sea Salt as Needed



  • Pre-heat oven to 400
  • Place carrots in a glass baking sheet and drizzle with olive oil, salt, and pepper, and bake for thirty minutes
  • In a small skillet, spray olive oil over hazelnuts and season them with cumin, coriander, and salt
  • Smash hazelnuts until they are in pieces
  • Mix together yogurt, harissa, lemon, and salt
  • Assemble by spreading yogurt sauce across plate, top with carrots, then hazelnuts, and then sesame seeds
