These Are A Few Of My Favorite Things Salad

Serves 4 – 330 Calories Per Serving – 17g fat/40g carbs/7g protein


  • Olive Oil Spray
  • 2 Sweet Potatoes
  • 1/2 Cup Walnuts
  • 6 Cups Spinach
  • 1 Shallot
  • 1 Pomegranate
  • 2 T Apple Cider Vinegar
  • 2 T Olive Oil
  • 1 T Dijion Mustard
  • 2 Tsp Xylitol
  • 1 Tsp Garlic Powder
  • Sea Salt as Needed



  • Pre-heat oven to 400 and place parchment paper on baking sheet
  • Dice sweet potatoes and shallot and lay out on baking sheet, spraying with olive oil and seasoning with salt, and baking for twenty minutes
  • Mix together the last six ingredients to form a dressing
  • Assemble salad, starting with spinach, then pomegranate, walnuts, sweet potatoes and shallot, and top with dressing
