Red Lentil Flatbread and Guac, Guac, Guac!

Serves 2 – 520 Calories Per Serving – 24g Fat/54g Carbs/22g Protein

Ingredients

  • 3/4 Cup Lentils
  • 3/4 Cup Water
  • 1/2 Cup Water
  • 2 T Olive Oil
  • 1 Tsp Oregano
  • 1 Tsp Basil
  • 1 Tsp Onion Powder
  • 1 Tsp Garlic Powder
  • 1 Avocado
  • 1/2 Cup Cherry Tomatoes
  • Sea Salt as Needed

 

Instructions

  • Soak lentils in 3/4 cup water for two hours
  • Pre-heat oven to 250 and brush cast iron skillet with half of olive oil
  • In a blender, mix together lentils, water, salt, half of olive oil, basil, oregano onion powder, and garlic powder
  • Pour into skillet and bake for 30 minutes
  • Mash avocado and dice tomato and mix together with salt and chili powder
