Red Lentil Flatbread and Guac, Guac, Guac!
Serves 2 – 520 Calories Per Serving – 24g Fat/54g Carbs/22g Protein
Ingredients
- 3/4 Cup Lentils
- 3/4 Cup Water
- 1/2 Cup Water
- 2 T Olive Oil
- 1 Tsp Oregano
- 1 Tsp Basil
- 1 Tsp Onion Powder
- 1 Tsp Garlic Powder
- 1 Avocado
- 1/2 Cup Cherry Tomatoes
- Sea Salt as Needed
Instructions
- Soak lentils in 3/4 cup water for two hours
- Pre-heat oven to 250 and brush cast iron skillet with half of olive oil
- In a blender, mix together lentils, water, salt, half of olive oil, basil, oregano onion powder, and garlic powder
- Pour into skillet and bake for 30 minutes
- Mash avocado and dice tomato and mix together with salt and chili powder
