Oodles of Zoodles and Tofu

Serves 2 – 450 Calories Per Serving – 31g fat/21g carbs/28g protein

Ingredients

  • 1 T Olive Oil
  • 2 Zucchini
  • 1 Package Tofu
  • 1/4 Cup Sunflower Butter
  • 1/4 Cup Water
  • 1/4 Cup Liquid Aminos
  • 2 T Xylitol Maple Syrup
  • 1 Tsp Garlic Powder
  • 2 Tsp Sriracha
  • 1 Lime
  • Sea Salt as Needed

 

Instructions

  • Spiralize the zucchini and squeeze our the extra moisture
  • Add to skillet with olive oil and cook over medium heat
  • Dice tofu and add to the same skillet
  • Mix together sunflower butter, water, liquid aminos, maple syrup, garlic powder, sriracha, and lime juice
  • Add to skillet and mix all together before serving
