The Best Potatoes You’ll Ever Eat
Serves 3 – 440 Calories Per Serving – 18g Fat/67g Carbs/6g Protein
Ingredients
- 6 Yukon Gold Potatoes
- 2 T Olive Oil
- 2 Tsp Fresh Rosemary
- 1/2 Sweet Onion
- 1 T Xylitol
- 1 Tsp Pepper
- 1 Tsp Garlic Powder
- 6 Slices Vegan Gruyere Cheese
- Sea Salt as Needed
Instructions
- Pre-heat oven to 400 and place parchment paper on baking sheet
- In a small sauce pan, add olive oil, garlic powder, pepper, rosemary, xylitol, and diced sweet onion, sautéing until tender
- Wrap potatoes in a wet paper towel and microwave for six minutes or until tender
- Smash the potatoes on baking sheet until flat and pour onion sauce over top
- Shred the gruyere and place on top of potatoes and bake for fifteen minutes
